For The Dough
1 1/2 cups plain flour (maida)
1 1/4 tsp instant dry yeast
1 tsp sugar
2 tbsp finely chopped garlic (lehsun)
1/2 tsp dried oregano
2 tbsp soft butter
1/2 tsp dry red chilli flakes (paprika)
salt to taste
For The Spice Mixture
1/4 tsp freshly ground black pepper (kalimirch)
1/4 tsp dried basil
1/4 tsp dried rosemary
1/2 tsp dried thyme
1 tsp dry red chilli flakes (paprika)
1 tsp garlic (lehsun) powder
1/8 tsp salt

For activating the yeast

- Add sugar. Sugar has multiple roles in bread making. One is it acts as a food for yeast and helps in creating carbon dioxide and alcohol. - To make spice mixture for garlic bread , in a mortal pestle (khalbatta), take 1/4 tsp freshly ground black pepper (kalimirch).
- Add 1/4 tsp dried basil.
- Add 1/4 tsp dried rosemary.
- Add 1/2 tsp dried thyme.
- Add 1 tsp dry red chilli flakes (paprika).
- Add 1 tsp garlic (lehsun) powder.
- Add 1/8 tsp salt.
- Pound till coarse so the flavours blend very well and keep aside. You can either use the one which comes with the dominos pizza, dried mixed herbs or make your own by following this recipe. This seasoning is very important and provides the necessary flavour to our Dominos garlic bread.
How to make Dominos Garlic bread
- To make Dominos style garlic bread at home, dust a clean dry surface with little maize flour. It gives a rough texture similar to what you get in Dominos garlic bread.
- Place the risen dough over it.
- Knead it till smooth by stretching it and folding it back. Do not compromise on kneading part, as the gluten needs to be formed which helps in giving a fluffy texture to the garlic bread strips.
- Divide the dough into 2 equal portions.
- Roll a portion of the dough into a 175 mm. (7”) diameter circle using a little maize flour for rolling.
- Spread ½ of the garlic butter mixture on one side of the circle, leaving the edges. Ensure you do not reach the edges or else it will ooze out and also make it difficult to seal.
- Cover it with the other half of the dough to make a semi-circle.
- Press it well using your fingers to seal the edges completely.
- Repeat step 5 to 8 to make one more garlic bread.
- Place them on a baking tray lined with butter paper.
- Cover it with a damp muslin cloth and keep aside for 30 minutes. Allowing dough to rise twice results in a finer gluten structure than allowing it to rise once. This gives a better volume, a more mellow yeast flavour and a finer texture to the bread.
- After 30 minutes, the garlic bread will look like this.
- Slit vertically each garlic bread slightly at regular intervals using a sharp knife or a pizza cutter.
- Brush 2 tsp of melted butter over each garlic bread.
- Sprinkle the prepared spice mixture evenly over them. This gives them the perfect all-over garlic flavour in every bite.
- Bake it in a pre-heated oven at 200°c (400°f) for 25 minutes.
