These Watermelon Lime Jelly Shots have a green lime layer and a pretty pink watermelon layer for a summer fun Jelly shot.

Today I could definitely have a shot.

Or 8.

Last night around 11pm while my husband and I were sleeping we were awoken by a loud noise.

We couldn’t really figure out what it was but the dogs were freaked out…at least the ones who aren’t deaf. 🙂

It was dark out and our area doesn’t have street lights and we didn’t see anything.

Those of you who are long time readers and who follow my Instagram know that my husband and I take in senior and/or special needs Cavalier King Charles Spaniels and English Toy Spaniels.

We are the crazy spaniel people.

And to prove it we got a mailbox made as a spaniel.

We live kind out in the sticks and on a curve.

So people miss our house pretty much all the time.

In our area people give directions by landmarks usually.

So things like if you reached the large orange barn or the whale house (they have a whale sculpture) you’ve gone too far are directions around here.

So it’s part of why we chose to get a unique mailbox.

I won’t lie when we got it years ago we wondered if some kids would take a baseball bat to it.

But the years went by and nothing.

Until last night.

Turns out the sound was someone or someone’s BLOWING up my poor little spaniel mailbox with dynamite.

It was blown all over.

A piece had hit our house.

And the distance from our house and our mailbox is pretty decent.

It’s under investigation with the post master but I doubt much will happen.

Our Nest only recorded the sound and not the movement sadly.

And so booze was in order.

Because I was rather fond of that mailbox.

Since I’m little Mrs. Jelly Shots I decided to make some Watermelon Lime Jelly Shots.

I had seen the idea just with regular Jelly for kids on Pinterest.

Adding booze sounded more fun. 😀

I chose lime for the bottom flavor because I think of all the green Jell-O colors it goes best with watermelon.

Especially the Jolly Rancher Watermelon because it’s tart.

Other gelatin makers make a watermelon flavor but I really love the Jolly Rancher gelatin way more.

The recipe calls for using white food coloring in the watermelon gelatin.

You don’t need to if you don’t want to…for I just wanted them to be a pretty pink color.

This time I used Smirnoff Sour Watermelon Vodka but you can also us Watermelon Pucker if you prefer.

I just used plain vodka for the lime layer.

I’m off to be sad about my mailbox.

Ingredients

Instructions

  1. For the Lime Layer:
  2. Bring1 cup water toa boil.
  3. Emptygelatin powder into a large mixing bowl and add the boiling water.
  4. Continue stirring for two minutes or until the jello is completely dissolved.
  5. Add in the 1/2 cup of cold water and vodka.
  6. Stir until mixed and pour into 2oz. cups filled 1/4 of the way full. Remember you are going for a thin layer just like on a watermelon.
  7. Place in fridge and let set up for at least an hour.
  8. For the Watermelon Layer:
  9. Bring2 cups water toa boil.
  10. Emptygelatin powder into a large mixing bowl and add the boiling water.
  11. Continue stirring for two minutes or until the jello is completely dissolved.
  12. Add in the cup of cold water and Smirnoff Sour Watermelon.
  13. Add a couple of drops of white food coloring. You don't need to do this but it gives it the very baby pink color.
  14. Carefully pour over the chilled lime layer and fill to the top.
  15. Let set in fridge for at least 2 hours.
  16. Top with mini chocolate chips if desired for the look of seeds.
